Sweet Potato Fries

I made these the other night with my Butternut Squash and Shallot Soup (here) and  roasted chickpeas (stay tuned for future post). It got rave reviews (from my boyfriend and his three friends) so I will be making this all the time now! They were sooooo delicious and so easy! They can go with just about anything and talk about throwing in some more “orange” veggies, bring on the rainbow!! (If you don’t know what I am talking about read about it here) I found this recipe from A Hungry Spoon, I absolutely love her recipes, and her blog!

Sweet potato fries- From a hungry spoon

Ingredients:

  • 2 medium sweet potatoes, peeled and cut into thin slices (less than 1/4 inch thick)
  • olive oil
  • garlic powder
  • paprika
  • “steak” seasoning
  • ground black pepper

Directions:

1) Preheat oven to 425 degrees. Spray a large baking sheet with cooking spray.

2) Place sweet potato slices (or “planks” as Adam likes to call them) in a large bowl. Drizzle just a little olive oil and stir to coat. Sprinkle a generous amount of garlic powder and a dash of paprika and stir to coat.

3) Spread sweet potato slices in a single layer on the baking sheet. Sprinkle with steak seasoning and black pepper. Bake for about 12 minutes, and then flip each slice over. Bake for another 12 minutes, or until lightly browned around the edges.

  1. These look yummy. This recipe is quite different from mine which I’ll be posting tonight. I bet these have a little spice to them, so I would probably love it! I will have to try it this way!

  2. I need to make these! The only way I make them is baked, sometimes mashed. There’s something about eating them in the shape of fries I love 🙂

  3. ooh! I *just* bought a huge bag of sweet potatoes from TJs – I’m totally making these 🙂 I usually just roast sweet potatoes, and then save them and throw ’em in a big salad. They’re one of my favorite foods hands down!

  9. The fries look sooo good! I’m pretty uncreative with sweet potatoes – cinnamon and a little butter is usually it for me.
