Herb Roasted Chicken

I love this recipe. It is so delicious and nutritious and super easy! I served it with some grilled veggies, a sweet potato, Capresse salad and spinach bites. I found this recipe on one of my favorite blogs A Nutritionist Eats, thank you Emily!


  • 5 cloves garlic
  • 2 inch piece of ginger
  • 2 Tbsp orange juice
  • 1 bunch of cilantro
  • 1 Tbsp olive oil
  • salt & pepper
  • 1 whole chicken, broken down into 8 pieces


1. Place first 6 ingredients in food processor and process until smooth, about 1-2 minutes.

2. Pre-heat oven to 450° F.

3. Arrange chicken in a single layer on a baking sheet and coat with herb rub.

4. Bake until chicken is cooked through, about 35 minutes.

  2. That sounds great. Most memorable meal was on my honeymoon in Venice. Ate at a restaurant in Burano. 160 euros for lunch, in 2003. Worth every penny. Crabs, fish, limoncello, risotto. I don’t even remember all the courses.
