Mashed Roased Cauliflower

This is a phenomenal recipe and a great healthy substitute for mashed potatoes. This recipe is courtesy of Comfy Belly.


  • 1 medium cauliflower
  • 1 large clove of garlic, pressed or finely minced
  • 1/4 teaspoon of sea salt
  • 2 tablespoons of olive oil (or other oil)
  • 1/4 teaspoon of thyme (optional)
  • warm water


1. Preheat an oven to 400 degrees F. Slice the cauliflower into pieces and place in a large mixing bowl.

2. Add olive oil, salt, and garlic to the bowl, and mix until the cauliflower is fully coated.

3. Place the cauliflower on a cookie sheet, and in the oven, and bake for about 20 minutes, or until they are browning around the edges.

4. Take the cauliflower out of the oven, and place in a blender. Add about 1 to 2 cups of very warm water to the blender. Blend until it is the consistency you like.

I served mine with pork tenderloin, braised kale and Brazilian cheese rolls. I also topped the cauliflower with the cilantro chutney I used for the sweet potato bites. It really added that extra flavor I think it needed.
