I love this recipe. It is so delicious and nutritious and super easy! I served it with some grilled veggies, a sweet potato, Capresse salad and spinach bites. I found this recipe on one of my favorite blogs A Nutritionist Eats, thank you Emily!
Ingredients
- 5 cloves garlic
- 2 inch piece of ginger
- 2 Tbsp orange juice
- 1 bunch of cilantro
- 1 Tbsp olive oil
- salt & pepper
- 1 whole chicken, broken down into 8 pieces
Directions
1. Place first 6 ingredients in food processor and process until smooth, about 1-2 minutes.
3. Arrange chicken in a single layer on a baking sheet and coat with herb rub.
4. Bake until chicken is cooked through, about 35 minutes.

Most memorable meal was the night I got engaged at one of my favorite restaurants – I will never forget it!
That sounds great. Most memorable meal was on my honeymoon in Venice. Ate at a restaurant in Burano. 160 euros for lunch, in 2003. Worth every penny. Crabs, fish, limoncello, risotto. I don’t even remember all the courses.
